Introduction

Ingredients

2 chicken thighs
1 onion diced
2 C chick peas (rinse if using canned)
1 14 oz can diced tomatoes, no salt added
1 C chicken broth
1/3 C dried sweetened cranberries (craisins)
2 small potatoes, diced
1 cubanelle pepper, diced (can use bell pepper)
1 PKT Sazon Goya
2 bay leaves
dash worcestershire sauce
1 tsp chili powder
Tips
I used frozen chicken thighs and this came out great. Delicious as written but feel free to add more veggies (carrots, corn, whatever). I was using a small crockpot and did not have the room.
Directions
1) Spread onion slices on bottom of crockpot.
2) Place chicken thighs on top of onions.
3) Sprinkle one packet of Sazon over chicken.
4) Put everything else in crockpot ending with tomatoes on the top.
5) Cook 6 hours on high -or- 8 hours on low.
Serving Size: makes 5 (2 Cup) servings
