Introduction
A light-tasting orangy quick bread, also good as muffins. Perfect for breakfast or afternoon tea or coffee. Only a gram of fat per slice. Ingredients

1 1/2 cups All Purpose Gluten Free Flour (or mix together 1 cup brown rice flour, 1/3 cup potato starch, and 1/6 cup tapioca flour)
1/2 tsp xanthan gum
1 1/2 tsp baking powder
Grated rind of a large orange (about a tbsp -- you can leave this out if you don't have an orange handy)
2 large eggs
1/2 cup unsweetened applesauce (or substitute oil or unsalted butter)
3/4 cup granulated sugar (more if you want it sweeter)
1/2 cup fresh orange juice
1/4 tsp lemon extract
1-2 tsp granulated sugar
Directions
Preheat oven to 350 F. Put rack in center of oven. Grease a 5x9 bread pan or muffin tin with cooking spray.
Mix dry ingredients except for sugar. And orange rind and coat well.
Beat applesauce and sugar until fluffy. Beat in eggs. Add flour mixture, orange juice and extract and mix until blended.
Pour batter into prepared pan and sprinkle top with a tsp or 2 of granulated sugar. Place in center of oven for about 45 minutes or until knife inserted comes out clean.
Cool bread for 10 minutes, then remove from pan. Good just slightly warm or chilled. Store wrapped in plastic wrap in fridge for up to 5 days or cut individual slices to freeze. If they last that long.
Serving Size: Makes about 12 generous slices or muffins.
