Introduction

Number of Servings: 12

Ingredients

    1 Cup Mixed Nuts - raw
    1/4 Cup Coconut - toasted -save 2 tsp to roll the balls in
    1/4 tsp Almond or Vanilla Extract
    1/2 tsp cinnamon
    1/4 tsp salt

Tips

You can substitute raisins or dried fruit for the coconut. You can roll the balls in chopped nuts if you prefer.


Directions

Toast raw nuts and coconut in the oven at 350or in a dry fry pan on medium heat for 5-7 minutes to release the natural oil and toast. Set aside 2 tsps of coconut to roll the balls in. Place remaining ingredients in a food processor and pulse until mixture forms a paste/dough like consistency (don't over mix or you will end up with a thin spread like peanut butter). Using wet hands, roll mixture into 12 Snack Balls. Roll each ball in reserved coconut.
