These started as low-carb meatballs but now they're just tasty. It's a very flexible recipe you can add whatever spices and vegetables you like, this is just how I prefer it. Ingredients

    3 lb ground turkey
    1 medium onion, chopped fine
    2 cloves garlic, chopped fine
    2 small stalks celery, chopped
    1 medium carrot, chopped
    2 large eggs
    1.5 cups ricotta cheese
    2 tbsp olive oil
    2 tbsp Parmesan cheese
    2 tsp cyanne pepper
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp paprica
    0.5 tsp red pepper flake
    salt and pepper to taste

Tips

Don't line the baking sheet with tin foil -- the foil sticks to the meatballs and just makes a bigger mess than sticking them on the baking sheet directly.

if the meatballs come out tough, next time you can mix in a small amount of breadcrumbs mixed with milk to the meat before cooking.


Directions

Preheat oven to 400. Place all ingredients in a large bowl. Knead until smooth. Form into balls and place on a baking sheet. Bake for 20-30 minutes, until the meatballs are brown.

Serving Size: makes 24 large meatballs or 32 medium meatballs
