Number of Servings: 1


    2 cups asparagus, chopped
    1/2 tbs butter
    1 tbs flour
    1/2 cup skim milk
    salt and pepper to taste
    2 pieces wheat toast


blanche the asparagus, drain.
in same saucepan, melt butter. add flour and mix to a roux
whisk in milk, simmer until thickened.
add salt and pepper to taste
mix in cooked asparagus until heated thoroughly.

Serve on two pieces wheat toast

  • Everyone else loved this recipe... My fresh asparagus was very thin. Maybe I did not chop fine enough. I liked the high protein of this recipe. I only used 1 cup of asparagus and it was still plenty for two pieces of toast. It was too crunchy and all asparagus with a little cream sauce. - 1/11/11

  • This is really good and my kids liked it. I have also done this with a can of drained tuna instead of the asparagus. We call it Cream Tuna on Toast. - 4/23/08

  • I've tried this with cheese sauce instead of cream sauce. It's wonderful - and you have the added benefit of getting your protein that way. My grandmother and I used to make this when asparagus was fresh and in season. - 4/5/08
