Number of Servings: 1

Ingredients

    2 cups asparagus, chopped
    1/2 tbs butter
    1 tbs flour
    1/2 cup skim milk
    salt and pepper to taste
    2 pieces wheat toast

Directions

blanche the asparagus, drain.
in same saucepan, melt butter. add flour and mix to a roux
whisk in milk, simmer until thickened.
add salt and pepper to taste
mix in cooked asparagus until heated thoroughly.

Serve on two pieces wheat toast

    O.K.
    Everyone else loved this recipe... My fresh asparagus was very thin. Maybe I did not chop fine enough. I liked the high protein of this recipe. I only used 1 cup of asparagus and it was still plenty for two pieces of toast. It was too crunchy and all asparagus with a little cream sauce. - 1/11/11
