Ingredients

1 cup of raw cashews soaked overnight in the refrigerator
2 cups of almond milk made into ice cubes
2 Packets of Stevia
1/4 cup of sugar
2 tsp Vanilla Extract
Directions
Repeatedly rinse the cashews until water runs clear. Place in Vitamix and blend starting at 1 and quickly raising to 10, then switching to high speed. Blend until smooth and creamy.
Add the sugar, stevia, vanilla and almond milk ice cubes. Start again at 1 and quickly raise to 10 on low and then switch to high.
Use the tamper to press the ice cubes into the blades and blend until smooth and thick - 30- 60 seconds. Blend until thick and it looks like ice cream. Don't go too long or the heat of the blade will cause it to melt.
