Ingredients

8 Eggs
1 cup Sausage crumbles
2 cups cooked quinoa
3/4 cup shredded cheddar cheese
1/4 cup skim milk
1/4 cup water
2 tsp yellow mustard
1 tsp seasoned salt
1/4 tsp pepper
Tips
quinoa has a taste and texture similar to brown rice. It is a wonderful source of protein, vitamins, and minerals. Quinoa is considered a super food by some. Cooking the quinoa ahead really speeds up the process. Add veggies of your choice for variety.
Directions
Quinoa - add 1 cup uncooked quinoa and 2 cups water to 1 1/2 Quart sauce pan. Bring to boil. Reduce heat to simmer, cover and cook 15 minutes.
While quinoa is cooking,
Preheat oven to 350 degrees
Spray muffin pan with cooking spray
Break eggs in a large bowl, add water. mustard, seasoned salt, pepper, and milk. Mix together with fork.
Add sausage crumbles and cheese, mix well.
Add cooked quinoa, mix well.
Pour mixture into muffin pan.
Bake 18 minutes or until eggs are set.
Serving Size: makes 12 muffin sized frittatas
