Ingredients

1.75 cups Flour, Whole Grain
1 teaspoon Baking Soda
0.5 teaspoon Salt
0.5 cups Granulated Sugar
3 tablespoons Poppy Seeds
1 cup Sour Cream, Reduced/Low Fat
0.25 cups LouAna Pure Coconut Oil, melted
2 teaspoons Vanilla Extract
Tips
Do not over mix once you combine the wet ingredients into the dry or your muffins will not rise.
Directions
Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine sour cream and remaining 3 ingredients; add to dry ingredients stirring just until moistened.
Spoon batter into greased or paper lined muffin tin, two-thirds full. Bake at 400 F for 18-20 minutes or until lightly browned. Remove from pans immediately onto cooling rack.
Serving Size: makes 12 muffins, 1 muffin = 1 serving
