Introduction

Chocolate lovers can enjoy low carb desserts, too! Obviously, due to the fact that almond flour is used, the texture is not quite the same as using very fine, ordinary flour. Ingredients

    Ingredients:

    ¼ x cup almond flour
    1 x Tbls cocoa powder, unsweetened, highest quality you can get (South Africa, Nomu Brand)
    ¼ x tsp baking powder
    *2 x Tbl Xylitol
    2 x Tbls melted butter
    1 x Tbls water
    1 x Egg

    Method:

    In a bowl, mix together all the ingredients.

    Divide mixture equally into 3 medium size ramekins, covering the ramekins with plastic wrap. Cut a small slit into the top of each plastic wrapped ramekin and microwave on high for 2 – 3 minutes or until the cake looks set but still moist.

    Turn out the mini cakes, cool and decorate with whipped cream and fresh strawberries.

Tips

* Caution – Xylitol can have an extreme laxative effect on some people. When using xylitol, use it sparingly at first to build up a tolerance.

Calories for this recipe do not include the strawberry and cream topping.


Directions

Microwave on high for 2 - 3 minutes.

Serving Size: Makes 3 individulal chocolate cakes.
