Ingredients

    1 pkg of Eckrich Turkey Skinless Smoked Sausage (13 oz)
    2 potatoes
    2 carrots or 1 cup diced
    Pkg of Green Giant Antioxidant Blend (Broccoli florets, julienne carrots and red and yellow sweet pepper strips in a garlic-herb infused extra virgin olive oil seasoning)
    1 can of chicken broth

Tips

I will usually add some seasoning to the potatoes and carrots (salt, pepper, onion power, celery seed, etc) so add some flavoring. If need to I will also use the chicken broth that I boiled the potatoes and carrots in if needed in the skillet while simmering.


Directions

Diced up potatoes and carrots and bring to a soft boil in 3/4 of the chicken broth. Only cooked until lightly soft as it will cook some more with the sausage in the skillet. Sliced up the sausage and cooked until lightly brown in the skillet. Instead of Pam or olive oil I use some chicken broth to brown sausage. Add the potatoes and carrots plus of the chicken broth if needed. Add the package of green giant vegetable. Stir all together, put the lid on the skillet and let it simmer until all of the vegetables are to your liking.
