Introduction

Done in crockpot - mix coconut milk and red curry paste (1.5 tbs) together and pour into crockpot. Ingredients

    8 ounce chicken breast (2 small cut into cubes)
    2 cups peppers (I use a variety orange, red, green)
    1 cup onion (Spanish or sweet)
    1.5 tbs of Thai red curry paste
    1 can of coconut milk
    8 oz coconut water (or more/less) for desired consistency

Tips

Curry is to taste, I add coconut water to consistancy


Directions

Combine ingredients in crockpot - set on medium for 4 hours

Serving Size: Makes 4 servings - serve plain, over rice or noodles
