Ingredients

    2 c butter, softened
    1 c sugar
    2 tsp vanilla extract
    52 pecan halves, toasted
    mini paper muffin cups

Directions

1. In a large mixing bowl, cream butter and sugar. Beat in vanilla. Gradually add flour. Drop by heaping tablespoonfuls into miniature muffin cups; flatten slightly. Press a walnut half into the center of each.


Bake at 350 degrees F for 10-12 minutes or until edges are lightly browned. Cool for 2 minutes before removing from pans to wire racks.


In my experience, these take much longer to make. It's more like 30 minutes prep time and 30 minutes bake time, but I always bake them in 10 minute increments to be sure they don't over cook.


Makes 52- 1 serving crumpets.

    My recipe calls for 4 cups flour. I mix up 4 cups of nut and seed meals: almond, hazelnut, coconut flour, pea protein, and use no wheat flour. I also add 2 eggs. A wonderful cookie! - 12/8/14
