Ingredients

    2 Tbsp olive oil
    1 large onion chopped
    3 stalks of celery chopped
    2 tsp chopped garlic
    4 cups carrots sliced
    1 tsp Italian herbs
    1 tsp dried basil
    4 c vegetable broth
    1 tsp salt
    1/2 tsp pepper

Directions

Saute over medium heat in oil for 10 minutes - onion, celery, garlic, carrots, basil, Italian herbs.

Pour in broth, cover and adjust heat to simmer for approx 25 minutes or until carrots are tender.

Cool, pour 1/2 soup into blender and blend. Repeat with other half. add salt and pepper to taste.

Serving Size: approximately 1.25 cups
