Introduction
This is my second attempt at making all natural, high fiber granola bars. I use Quinoa/Oatmeal rather than just straight oatmeal because Quinoa has the same amount of Fiber with nearly 60% of the calories. Ingredients

2 TBSP Silk Pure Almond Milk - Unsweetened
1 tsp Vanilla extract, imitation, alcohol
.5 Cup Quaker Oats Old-Fashioned Rolled Oats
3 TBSP *Flax seed (whole) (King Arthur Flour brand)
.5 Cup Cooked Pereg Gourmet Quinoa Red Grain
.25 Cup Blanched Peanuts
1.5 Tsp Cinnamon, ground
1.5 TBSP Honey
.25 Cup Applesauce, unsweetened
Directions
1) Preheat oven 350
2) Spray 2 mini bread loaf foil pans with Pam
3) Chop Peanuts into bits
4) Mix Oatmeal, Cinnamon, Peanuts, Flax together and spread out on a cookie sheet, toast at 350 for 8-10 mins
5) Combine Almond Milk, Vanilla, Honey, and Applesauce in a small sauce pan, bring to boil for 1 to 2 minutes, stirring constantly.
6) Combine Toasted Oat mix with Applesauce mix together in a bowl.
7) Divided contents of bowl into bread pans. Spray fingertips with Pam and press evenly to the bottom of the bread pans.
Chill bread pans in the fridge for 30 minutes or until cool. Cut length ways with a butter knife for 4 even bars.
Serving Size: Makes 4 bars roughly 5.75" x 1" x 1/2" bars
