Ingredients

    1 1/2 cups all purpose flour
    3/4 cups Flaxseed Meal
    3/4 cups Oatmeal
    1 cup brown sugar, packed
    2 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt
    2 tsp. cinnamon
    1 1/2 cups carrots, shredded
    2 apples, medium sized, peeled and shredded
    1/2 cup raisins
    3/4 cup 2% milk
    2 eggs, large, beaten
    1 tsp. vanilla

    1 cup chopped nuts (optional). These are not in the calorie calculations

Directions

Blend together flour, flaxseed meal, oatmeal, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, and raisins (and nuts if you are using them). Combine milk, eggs, and vanilla. Pour into muffin mixture and blend well until all ingredients are moistened. Do not over mix.
Fill muffin cups 3/4 full. Bake at 350 for 15-20 minutes.
