Ingredients

    1 large head of cabbage
    4- stalks of celery
    1- medium sweet onion
    3- 13 oz. cans of Chicken Breast
    2- 15 oz. cans of black beans
    2- 15.5 oz. cans of Great Northern beans
    3 - 10 oz. cans of Rotel Tomatoes with Chiles
    2- 15 oz. cans of cut Green Beans
    1- 48 oz. box of Chicken Broth (fat free & lower sodium)
    Taco Seasoning
    Ground Cumin
    Garlic Powder
    Salt

Tips

You can add more chicken broth as your soup becomes less liquid. It is very bulky, so you can definitely use it for leftovers with more broth added. It really stretches!


Directions

Chop celery, onions and cabbage then sit aside.
Put 8 qt stock pot on medium heat then add onions, celery and cabbage. Pour Chicken broth over the top. Then add rotel tomatoes (with juice) and olive oil. Mix thoroughly. Let come to boil, then simmer for 1 hour. (add water, if it doesn't cover well enough).

After 1st hour, take chicken (after draining and flaking with fork) and all beans (drained) and add to the soup.
Add seasonings to the top then mix thoroughly and let simmer for another hour. (add more water, if needed)

You can add more or less seasoning to taste.

You can cook for a shorter period of time, but the flavors meld together better if you let them simmer longer.
