Ingredients

    4.5 oz cooked chicken breast (skinless)
    1/4 red pepper, diced
    1 scallion, sliced
    3 T shredded low-fat cheddar cheese
    2 T salsa
    2 T fat-free sour cream
    2 cups shredded green leaf lettuce

Directions

Combine first 6 ingredients in bowl, then microwave for 30 seconds.

Serve on top of shredded lettuce.
