Number of Servings: 4

Ingredients

    1 cup water
    1/2 cup brown rice
    3 egg whites
    1/2 cup sliced scallions
    1/2 cup chopped walnuts
    1/4 cup dry bread crumbs
    1/2 tsp thyme
    1/4 tsp basil
    1 tblsp olive oil
    1/4 chopped green pepper
    1 15oz can kidney beans
    8oz can tomato sauce
    1 tsp chili powder

Directions

Cook the rice in water, watch closely, it should take about 30 min. Cool while preparing other ingredients. Add scallions, walnuts, thyme, basil, bread crumbs and egg whites to rice. Mix thoroughly. Shape into 2 inch patties. Heat 1/2 inch olive oil or other oil and pan fry patties to a golden brown. Remove to paper towels and keep warm. While cooking patties, saute green pepper in olive oil in a small saucepan. Add undrained kidney beans, tomato sauce and chili powder. Mash the beans slightly while stirring and heat through. Serve the sauce over the rice cakes and a dollap of sour cream, if preferred. Enjoy!
