Ingredients

    *Orzo, Barilla, uncooked, 16 oz
    Spinach, fresh, 12 oz
    *Pine Nuts, .25 cup
    Garlic, 3 clove
    Basil, 4 tbsp
    Chicken Broth, 2 cup (8 fl oz)
    Onions, raw, .5 cup, chopped
    Olive Oil, .25 cup

Directions

1. Cook pasta according to package directions.

2. In a two quart saucepan bring 2 cups of chicken broth to a rolling boil. Add chopped herbs (garlic and basil), chopped pine nuts, and chopped onion and allow to boil for 5 minutes.

3. Turn off heat and stir in olive oil and fresh spinach.

4. Add the pesto to cooked orzo and mix well before serving.

    So ... does this recipe call for 8 oz. OR 2 cups of chicken broth? It sounds very good! - 4/25/08

    Sorry for confusing you, it should be two 8 ounce cups.
