Ingredients
*Kraft Fat Free Mayonaise Dressing, 8 tbsp
Capers, canned, 1 tbsp, drained
Lemon juice, 1 tbsp
Pink Salmon (canned), 14.75 oz
Scallions, raw, 1 medium (4-1/8" long) chopped
*Celery (1 Stalk), finely chopped
*Safeway Dried Bread Crumbs, 0.5 cup
Hot Pepper Sauce, Few Drops
*Canola Oil, 2 1tsp
Directions
Tartar Sauce:
Stir together 1/3 cp mayo, capers, & lemon juice. Cover & refrigerate until ready to serve.
Cakes:
Mash salmon with bones in a large bowl with fork. Stir remaining 3 TBS mayo, scallion,celery, 3TBS breadcrumbs & hot sauce. Cover & refrigerate until firm (1 hr) or overnight.
To Cook:
Shape into 4 patties. Spread remaining 1/4 cp breadcrumbs on sheet of wax paper & heat oil in skillet over medium heat. Coat patties with bread crumbs on both sides. Cook in skillet until heated through, about 5 to 8 minutes per side. Serve with tartar sauce.
