Introduction

I whipped this up with materials on-hand. I like mine fully loaded with lettuce so it's almost a salad you can eat with your hands (wrapped up in a nice clean package). This mixes the savory flavor of hatch chile, turkey, and bacon, with the sweet flavors of balsamic vinegar and pomegranate. Love! I whipped this up with materials on-hand. Ingredients

    1 Tortilla by Tortilla Factory (Low Carb High Fiber)
    1-3 slices HEB - Roasted Deli Turkey, ~ 2 oz
    1/2-1 cup Spring Mix or Baby sweet mix Lettuce
    1/4 cup Pomegranate arils (seed/juice sacs)
    1 slice Sargento Natural Baby Swiss Deli Style Sliced Swiss Cheese
    1 tsp Balsamic Vinegar
    1 tsp Extra Virgin Olive Oil
    1 dash Salt (optional)
    1 dash Pepper, black
    2 tbsp Hatch Chile, roasted
    1 Tbsp Philadelphia Bacon Cream Cheese

Tips

The olive oil, cheese, cream cheese, bacon, and salt are entirely optional. All of these ingredients are used in moderation and studies have shown vitamins (such as are present in the lettuce) are best absorbed when consumed with some fats. I have no dietary restrictions which prohibit my eating moderated quantities of cheese or bacon.


Directions

Warm tortilla over an open flame or in a toaster oven until golden on one side and warm on the other. (You want to waken the flavors but not make it too stiff to roll)

Spread warm tortilla with 1 Tbsp Bacon (or other flavored) Philadelphia Cream Cheese (the ingredient chosen for nutritional purposes was a 1/3 less fat onion/chive flavor and has same calorie info as the bacon flavored cream cheese, you may crumble one cooked strip of bacon ontop regular cream cheese if you want bacon flavor to the wrap if you don't have access to bacon cream cheese).

Chop 1 medium roasted hatch chile and spread atop cream cheese. (I used mild though you may use a hotter chile or even roasted jalapenos if you prefer).

Top with 1-3 slices of fresh roasted turkey (I used thinly sliced in house roasted turkey from H.E.B grocery here in texas).

Top with 1 thin slice of baby swiss (I used boar's head brand, Sargento is listed)

Pile on 1/2-1cup mixed baby lettuce

Drizzle with 1 tsp aged 25 year balsamic vinegar and 1tsp extra virgin olive oil (I used unfiltered olive oil for a rich flavor).

Sprinkle with 1/4 cup fresh pomegranate arils (these add a nice sweetness and crunch, you might substitute dried cranberries if pomegranites are unavailable).

Salt and pepper to taste (optional)

Roll tightly and slice in half.

Serving Size: Makes one wrap- will serve 1-2 people
