Introduction

This is a yummy creamy "white sauce" base for any vegan pasta. Add in some basil, roasted tomatoes, and artichoke hearts for a Mediterranean feel, or some gardein chicken and broccoli for a cheap restaurant version, or some peas, mushrooms and vegan bacon-- but be warned-- that tastes so good you may die. Ingredients

    1 small Cauliflower, raw and chopped (~4c)
    1/2 T Extra Virgin Olive Oil
    2 cloves roasted Garlic, minced
    *1/2 cup Silk cashew milk (unsweetened!)
    1/2 cup Nutritional Yeast
    1 T Lemon, juice
    2 T vegan Margarine, soft
    **1t onion powder
    **1t garlic powder
    **1t salt (or more or less to taste)
    **1/2 t pepper (or more or less to taste)

    Garnish:
    **red pepper flakes
    **fresh basil leaves

    *you may add a little more or less of this for consistency-- but at 25 calories PER CUP-- a dash here or there won't affect the calorie cound

    ** these items are not included in the nut breakdown


Directions

steam or boil cauliflower in water until soft (steam ~ 10 minutes or boil ~ 5 minutes)

Add everything but garnish (go light on the spices at first and test til your liking) in a blender or food processor and whir up. Add more cashew milk as needed to get to the consistency you want.
