Ingredients

    4 Boneless, skinless chicken breasts, tender's removed

    2 Egg whites lightly beaten

    1cup fat free breadcrumbs

    1/2 cup shredded parmesan cheese

    1 1/2 cups lowfat marinara sauce

Directions

Preheat oven to $450 degrees.

Place chicken breasts between two sheets of plastic wrap or waxed paper. Flatten to about 1/2 inch thick with a rolling pin or skillet.

Place egg whites in a shallow bowl, and breadcrumbs and half the parmesan cheese on a plate.

Dip each chicken first in eggs whites, allowing the excess to drip away, then coat in the bread crumb mixture. Place chicken on baking sheet coated with nonstick cooking spray.

Bake for 15 to 18 minutes turning half way through, until chicken is cooked to 160 degrees as an internal temperature.

While chicken is cooking, heat marinara sauce in a small saucepan over low heat.

When chicken is cooked, transfer to 4 plates, spoon sauce over each and sprinkle remaining cheese on top.

Serves 4.

    This was simple and quick, not to mention it tasted fabulous! Added some lowfat mozzarella and broiled it until bubbly. Served with some spaghetti on the side and some italian bread. The family loved it, thanks - 11/14/09

    This is very delicious. To kick it up I marinated the chicken cutlets for 3 to 4 hours in a little bit of fat free italian dressing with fresh ground italian herbs sprinkled on both sides. I jazzed up the marinara sauce with sauteed zucchini, green pepper and fresh basil. Scrumptious!! - 8/10/08
