Introduction

I met a Vitamix guy at Sam's Club and after looking on his website, I decided to try this recipe. I really don't like it. I think it should have been made with cream and no sweetness. My kids didn't like it either. I will try again, with other ingredients. I met a Vitamix guy at Sam's Club and after looking on his website, I decided to try this recipe. I really don't like it. Tips

I personally didn't like this and will tweak it next time, but needed the nutritional info for this 1st time. I look forward to altering it, because it was really easy to make.

Directions

Core 6 Roma tomatoes and cut into 4 pieces. Put in the Vitamix with 1 T agave.

In a small pot heat the soy milk until bubbly and then add some sprinkles of lemon juice and continue to cook for 1 more min..

Add the minced garlic and minced carrots and cook over medium heat for 3 minutes until the carrots are tender. Stirring often.

Add this mix on top of the tomatoes in the Vitamix and start on Variable 1 then slowly advance to High 10 for 5 minutes and 45 seconds.

Lower to Variable 1 and add some cream cheese, basil and salt and pepper to taste.

Makes 2 servings of about 1 C each.
