Ingredients

    1 head, large (6-7" dia) Cauliflower, raw
    0.25 cup Egg whites, Naturegg Simply Egg Whites, 1/4 cup = 2 egg whites
    .5 cup, shredded Cheddar Cheese
    1 tsp Italian Herb Seasoning - McCormick (by JCO0715)
    .25 tsp Pepper, black
    1 dash Salt
    1 clove Garlic
    3 oz Mozzarella Cheese, part skim milk

Tips

A few steps to make but well worth the time and effort.


Directions

1. In a food processor puree 1 head of cauliflower until they are rice sized pieces.
2. Place the pureed cauliflower into a heat proof dish and place into a 350 degree oven for 20 minutes. Once cooked remove from the oven and allow to cool for 15 minutes.
3. Place the cauliflower into a clean towel and squeeze the excess liquid from the cauliflower. You should squeeze roughly 1 cup of liquid.
4. Increase the oven temperature to 450 degrees.
5. Transfer the cauliflower to a mixing bowl and add the egg whites, 1/2 cup of cheese, italian herb seasoning, chopped garlic, black pepper and salt. Mix well and combine.
6. Transfer the cauliflower mixture onto a baking tray lined with parchment paper and flatten into a rectangle roughly 1/4" thick.
7. Bake for 18 minutes and remove from the oven. Top with the remaining shredded cheese. Bake for another 5 minutes and then broil cheese until it turns golden brown.
8. Cut into 12 breadsticks and serve with fresh roma tomato sauce.
