I created this recipe from a few different ones I found when looking for something to do with spaghetti squash. The sweet potato in the tomato sauce really makes a difference! Ingredients

1 whole Spaghetti Squash
16 oz Ground Turkey - 97% fat free extra lean white turkey
1 28oz can Crushed Tomatoes
1 8oz can Tomato Sauce
1 medium carrot
1/2 small sweet potato
1/2 small yellow onion
1 tbsp Extra Virgin Olive Oil
2 cups shredded part-skim mozzarella
4-5 cloves garlic
2 tbsp tomato paste
2 tbsp basil
1 tbsp oregano
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste
Directions
Preheat oven to 400 F.
Roughly chop onion, carrot, sweet potato, and garlic. Place in food processor and blend until fairly smooth. Heat 1 tbsp olive oil in large pan over medium heat. Saute vegetable mix for 2-3 min then add turkey. Saute for 5 min or until turkey is browned and fully cooked. Add tomato sauce, paste, and crushed tomatoes and mix well. Add spices. Simmer for at least 15 min but the longer it goes the more flavorful it will get.
While sauce simmers, halve spaghetti squash and remove seeds. Spray with a little cooking oil, and place cut side down on baking sheet. Bake for 30-45 min until tender (you can also cook in microwave).
Once squash is cooked, use fork to scrape into strands. Layer sauce in 9x12 baking dish, then layer squash, then more sauce, then squash, then the last of the sauce on top. Spread mozzarella on top. Bake in oven 10-20 min until cheese is melted and browning.
