Introduction

Number of Servings: 8

Ingredients

    1 seedless cucumber
    1 red pepper
    1 small onion
    5 cups V8 or other vegetable juice
    hot sauce (to taste)
    salt and pepper (to taste)

Directions

Add 1/2 cucumber, 1/2 red pepper and 1/2 onion to food processor. Add 1 cup vegetable juice and puree. Chop the rest of the veggies and add to the puree. Mix in the last 4 cups of vegetable juice and season to taste with the salt and pepper and hot sauce. Chill before serving. Makes 8 1-cup servings.

    I love gaspacho but I only have had it ONCE because someone else doesn't like it . I think I can manage to make this a bit oftener if only just for myself. - 8/31/11
