Ingredients

    1 sweetpotato, 5" long Sweet potato
    .66 package (10 oz) Spinach, fresh
    3 serving Mushrooms, Fresh, White Button, Sliced (3 oz / 85g)
    .5 tbsp Butter, unsalted
    4 large Egg, fresh, whole, raw
    .5 cup Milk, 1%
    2 oz Feta Cheese

Directions

Slice sweet potato on mandolin. Line bottom and sides of pie plate that has been sprayed with cooking spray with sliced sweet potatoes. Spray again and bake at 350 for 20 minutes. Meanwhile, saute spinach and mushrooms, let cool. Beat together eggs, milk, salt and pepper. Put spinach mixture in crust. Pour egg mixture over top. Sprinkle with feta. Bake at 375 for 35 minutes.
