Ingredients

    2 tbsp. margarine or butter
    1 cup green bell pepper, chopped
    1 cup celery, chopped
    1 cup white or green onions, chopped
    1 clove garlic, minced
    1 cup uncooked rice
    1 can tomatoes, your choice
    1 can beef or chicken broth
    1 12 oz. package crawfish tails
    seasoning to taste

Directions

Melt butter in pan. Add bell pepper, celery, onion, and garlic. Saute until tender but not brown. Add remaining ingredients. Bring to a boil. Stir, reduce heat, cover, and simmer about 20-25 minutes, 35-40 minutes if using brown rice. Cook as if cooking rice, making sure not to stir too often. Cook until moist but not wet. Fluff and serve. Recommended seasoning are garlic and onion powder, and Creole seasoning such as Tony Cachere's.
