    2 tbsp. margarine or butter
1 cup green bell pepper, chopped
    1 cup celery, chopped
1 cup white or green onions, chopped
    1 clove garlic, minced
    1 cup uncooked rice
    1 can tomatoes, your choice
1 can beef or chicken broth
1 12 oz. package crawfish tails
    seasoning to taste

Melt butter in pan. Add bell pepper, celery, onion, and garlic. Saute until tender but not brown. Add remaining ingredients. Bring to a boil. Stir, reduce heat, cover, and simmer about 20-25 minutes, 35-40 minutes if using brown rice. Cook as if cooking rice, making sure not to stir too often. Cook until moist but not wet. Fluff and serve.
