Introduction

This is an easy, fresh salsa using ingredients from either your local farmers' market or the supermarket. The quality depends on the tomatoes, so don't mess around with this in the winter (unless you live somewhere warm year-round)! Ingredients

    1 cup chopped fresh tomatoes
    1/2 medium onion, diced
    2 cloves garlic, minced
    Juice of 1/2 lime
    1/2 jalepeno pepper (more or less depending on your tastes) OR 1/2 habanero pepper
    Dash of black pepper
    1 t. Cumin
    1 T. Kosher salt
    2 T. fresh Cilantro (or parsley), chopped

Directions

Chop all ingredients. Mix gently. Flavors intensify over time - enjoy immediately, or chill in the refrigerator for up to a week.

Makes 18 2 T. servings. Super low calorie, so add freely to dishes! Goes really well with any sort of mexican food or baked tortilla chips.
