Introduction

Try these delicious and nutritious energy bars. They are not too sweet! Try these delicious and nutritious energy bars. They are not too sweet!
Number of Servings: 8

Ingredients

    4 1tsp Coconut Oil
    .5 tsp Vanilla Extract
    .5 tsp Cardamom, ground
    8 serving Bard Valley Medjool Dates (2 dates)
    1 cup Pumpkin Seeds (whole seeds, roasted)
    1 cup Pistachio Nuts

Directions

1. Process Pistachios, pumpkin seeds, and salt in a food processor. 2. Add the rest of ingredients and process until it sticks together.
3. Line a 9x5 in. pan with a greased piece of parchment paper. Firmly press the mixture into the pan and refrigerate until firm.
4. Pull bars out by parchment paper and into 8 equal sized pieces.

Serving Size: makes 8 1x3 in. bars
