Introduction

Ingredients

    1 14.75 oz can pink salmon
    1/3 cup EGGBEATERS or other egg substitute
    2/3 cup seasoned bread crumbs

    1 small red onion, diced finely

    2 T reduced fat sour cream

    1 T olive oil, for frying

    Worcestershire sauce - to taste
    Lemon juice - to taste

Directions

Drain salmon and combine all ingredients in a bowl. Form patties into small, uniform patties - and make sure they are not too thick.

(* A good trick is to line a mayonnaise jar lid with some plastic wrap and form patties to fit *)

Heat oil in a medium-high cast iron skillet and add patties - make sure not to overcrowd the pan. Fry on each side for about 3-4 minutes or until golden.

Drain on paper towels and serve with your choice of condiments and a squeeze of lemon juice!

    It was good. I cheated and used real eggs instead of eggbeaters. I used 2 eggs and it held together well. Easy to make and good. - 1/29/08

    Very good...just had a hard time keeping a solid patty.. a little moist! But very tasty and filling! I had on bed of lettuce oh and also added shredded carrots with the onion! Awesome. - 1/6/08
