Ingredients

1 9-Inch Low-Fat Ready-Made Pie Crust
1 12-Oz. Tub Frozen Whipped Topping, Thawed
1 8-Serving-Size Box Sugar-Free Lime Gelatin
1/4 Cup Lime Juice
1/4 Cup Water
Another 1/4 Cup Water, separate
Directions
Empty the whipped topping container in a large mixing bowl. In a small saucepan over medium-high heat, combine lime juice and 1/4 C water, then add lime gelatin and stir until it is dissolved. Remove from stove. Let sit one minute. Add additional 1/4 C cold water to saucepan. Stir. Mix gelatin with whipped topping, using a spatula to fold ingredients until well incorporated. Place mixture into pie crust and refrigerate (sets rapidly). Makes 8 servings with a 9-inch pie crust size.
UPDATE NOTE in response to those who have reported jello/Cool Whip separation: This has happened to me a couple of times, and I determined that the jello was too warm when I incorporated it into the whipped topping; the jello has to be quite cool (but obviously still in liquid form), which avoids melting the Cool Whip as well and maintains the volume. Also, I do find that working with Kraft brand light Cool Whip makes a difference as opposed to a store brand.
