Ingredients

    2 tbsp Sesame Oil
    .5 cup Peanut Butter, smooth style, with salt
    6 tsp Granulated Sugar
    3 tbsp Soy Sauce
    1 tsp Ginger Root
    1 tbsp Nakano Seasoned Rice Vinegar
    1 tsp Hot Pepper Sauce
    .5 tsp Pepper, black
    540 grams Zucchini
    1 cup slices Cucumber (with peel)
    1 medium Carrots, raw
    .5 cup, chopped Scallions, raw
    0.083 tbsp Sesame Seeds

Directions

Whisk together the sesame oil, peanut butter, soy sauce, ginger, vinegar, hot sauce, and pepper in a large bowl. Thin the sauce with hot water until it's about the consistency of heavy cream; about 1/4 to 1/2 cup.

Use a Spiralizer on the zucchini, cucumber, and carrot. Toss the "noodles" with the sauce. Taste and adjust the seasoning as needed. Garnish with scallions and sesame seeds.

Serve.
