Introduction

I modified some recipes that I found on SP so my daughter would eat more broccoli. Let's hope it works! I modified some recipes that I found on SP so my daughter would eat more broccoli. Let's hope it works!
Number of Servings: 8

Ingredients

    1 bag frozen broccoli
    4 chicken breasts, no skin, cut into cubes
    150 grams (about 2 cups) shredded colby and monterey jack cheese
    1/2 cup cottage cheese
    1 Can Kroger Cream of Chicken soup
    1oz lemon juice
    1/2 C seasoned bread crumbs

Directions

Steam broccoli florets until tender. Place in bottom of 8 X 12 baking pan sprayed with butter spray. Cover with chicken. Mix soup, cottage cheese and lemon juice until smooth. Add mushrooms and 1 cup shredded cheese, then spread over chicken . Sprinkle bread crumbs and remaining cheese over top. Cover and bake for 45 minutes at 350 degrees. Remove lid and continue to bake for 15 minutes until bubbly.
Makes 8 - 3x4 inch servings.
