Ingredients

16 oz Tyson boneless, skinless chicken breast
1 cup, chopped Onions, raw
6 cloves Garlic
0.5 cup, sliced Peppers, sweet, red, fresh
1 serving Green Onion (fresh-1 stalk)
2.5 cup chicken stock, low sodium
1 package Tortellini, pasta with cheese filling
3 tbsp Extra Virgin Olive Oil
1-14 oz. can Great Value Diced Tomatoes Drained
1 tsp Italian seasoning
Tips
If you would like to make this a meatless option you could use tofu and vegetable stock. You could also add a little shredded Parmesan like my husband did.
Directions
Dice Onion, slice sweet peppers and green onion, and grate or mince garlic. Add to your pan with EVOO. Saute on medium high heat 10-15 minutes or until onion is almost transparent.
Cube Chicken breasts into 1/2 inch pieces and season with pepper. Add to the vegetable mix and brown chicken.
Finally add your tortellini, chicken stock, and Italian seasoning , making sure to rub herbs between your fingers to release all the aromatics and oils from the herbs. Bring to a boil for 5 minuets.
Let simmer for 5-10 more minutes.
