Ingredients

Trader Joes Organic Black Beans, 1.75 cup
Corn Springfield Whole Kernal, 1.75 cup
Trader Joes Organic Plain Whole Milk Yogurt, .5 cup
Chili powder, .5 tsp
Thyme, fresh, 1 tsp
Directions
Put everything (including the liquid in the cans of corn and beans) in a blender. Blend until basically smooth. (There will be flecks of beans showing still.) Chill and serve cold.
Can garnish with a small dollup of yogurt (add those calories!) or chopped parsley or just a sprinkling of cayenne.

I needed a quick lunch recipe and wanted to use things I already had in the house so I chose this one. Then I found out I was missing a few things. So I substituted pinto beans for the black beans and light yogurt for the whole milke yogurt. I used all walmart brand items and it came out wonderful! - 8/1/08

too many trader joe ingredianets as we don't have a trader joes near us..but will use my own everydat brands..sounds great - 6/29/08

I'm sorry about the Trader Joe's brand on things - its just that's what I use. I'm sure any can of black beans and any can of corn would work....

It really is good! It was a fluke - I used a bean dip recipe and I added the whole cans liquid and all + it came out totally soupy - then I realized it was delicious as a cold soup! (PS - I tried it later as a dip, by draining the beans and corn, but I didn't like it as much as the soup!)
