Ingredients

2 serving Aunt Jemima Original Complete pancake mix
6 fl oz Water, tap
1.5 tbsp Coconut, shredded sweetened
0.25 cup, slivered Almonds
2 tsp Lime Juice - ReaLime 100% Lime Juice
1 tbsp Canola Oil
Tips
If you do not have lime juice, you can use lemon juice.
Directions
Chop fine the slivered almonds and coconut, so that it is in really small bits. Set aside.
Measure out the water, and add the lime juice. Set it aside.
Measure out enough pancake mix for 2 people. Mix in the fine chopped almonds and coconut. Mix together the wet and dry mixes. Set it aside for a few minutes.
Meanwhile, heat a pan, and add enough oil for frying the pancakes. I recomend using either an electric griddle or an electric frying pan, as they are easy to control.
Use enough batter to form a 3 inch pancake. Form as many in your pan, as you are comfortable to work with. For the first side, fry until the bubbles burst and the outside starts to look a bit dry. The underside should look brown. Flip the pancake and fry until the pancakes are done. When you press on the top, the pancake should spring back, and the underside should be brown.
Remove the pancake and place on a warm plate. Continue to fry the rest of the batter until all of it is used.
Divide the pancakes onto 2 plates, and serve plain or with your favourite topping.
This makes about 8 3 inch pancakes.
