Ingredients

3 tbsp butter
2 medium onions, chopped
6 cloves garlic, minced
8 cups chicken broth
2 28 ounce cans petite diced tomatoes
2 cans white beans
2 cups fat free half and half
1/4 cup Parmesan cheese
2 tbsp Italian seasoning
2 tsp salt
3/4 tsp pepper
4 cups shredded chicken
24 ounces refrigerated Tortellini
4 cups fresh Spinach, chopped
Tips
I doubled the recipe because the ingredients I purchased got used up by doing so, then freezed half.
Directions
In a large pot over medium heat, melt butter. Add onion and garlic and cook until tender. Add chicken broth, diced tomatoes, white beans, half and half, Parmesan, Italian seasoning, salt and pepper. Bring to a simmer.
Add the chicken, tortellini, and spinach. Let simmer for 10 minutes for the tortellini to cook.
