Introduction

This is a recipe that is very versatile. You can replace the sugar with Splenda and it taste the same. Use low sodium soy sauce. Add other veggies. My husband likes zucchini so I almost always cook that in the recipe. I added squash because I love it. My children love the chicken and I serve this over ginger noodles, which is whole wheat spaghetti noodles cooked by directions and then I cook a separate pot of sauce and then put noodles in and toss with sesame seeds. Ingredients

    Canola Oil. 2 tbsp
    Chicken Breast, no skin, 5 ounces
    Summer squash, 2 cup, chopped
    Zucchini squash, 2 cup, chopped
    Ginger, ground, 1 tsp
    Onion powder, 1/2 tsp
    Garlic powder, 1/2 tsp
    Soy Sauce, 2 tbsp
    Chicken bouillon, 1 cube
    Water, tap, 1 cup (8 fl oz)
    Granulated Sugar, 1/4 cup
    Sesame Seeds, 1 tbsp

Directions

chop chicken into small bite size pieces. Heat oil in a large skillet. Combine all powders. Pour ginger, garlic, onion powder mixture into oil stir, quickly add chicken. Let sit and cook for 5 min, then stir. Cook for 5 more minutes and add veggies. Cook 5 more minutes then make a hole in the center of the skillet. Pour in chicken broth (bouillon and water) and soy sauce. Bring to a boil and then add sugar. Stir cook on high until slightly caramelized or thickened. Serve over ginger noodles.
