Ingredients

    4 cans black beans, drained and rinsed
    0.5 cup water
    1 tbsp Extra Virgin Olive Oil
    2 medium onions, diced
    8 Garlic cloves, minced
    4 Roma tomatoes, diced
    1 tsp ground Cumin
    1 tsp Dried Oregano
    16 oz salsa
    4 cups cooked quinoa

Tips

I like to put it on a low calorie tortilla (like a 50 calorie Ole Wellness tortilla) with sour cream and guacamole to make a healthier burrito


Directions

Saute onions in olive oil until soft. Add garlic, saute until fragrant. Add tomatoes, Cumin, Oregano, stir and let heat for 1 minute. Add black beans and 0.5 cup water, bring to a boil, let simmer for 10 minutes. Can mash some of the beans at this point to thicken. Add cooked quinoa and salsa to black bean mixture and stir. Makes 13 1-cup servings.
