Introduction

Almond flour can be hard to work with, so my first attempt at this was to make it into a pie. Delicious. I have also subitiuted the almond flour with coconut flour. Ingredients

    1.75 cup Cheese - Sargento classic mozzarella shredded cheese
    3 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    1 large Egg, fresh, whole, raw
    3 serving 1 tsp Parsley Flakes (by BUDDY_LOVE)
    1 unit, cooked (yield from 1 lb Ground Beef (lean)
    0.67 cup Triple cheddar shredded cheese kraft
    5 Tbsp spaghetti sauce

Tips

I cook the ground beef and shredded the cheese the day before.
I have served this as a pie at a potluck and it was well received.


Directions

Combine Mozzarella Cheese and the parsley in a bowl. Heat the cheese till melted in microwave for 1 minute or on stove top, using double boiler. Cool slightly.
Add the almond flour and egg to the mixture. After mixing , transfer to a nonstick baking sheet (or parchment paper) and knead dough until it combines & comes together. then place a sheet of parchment paper on top of the dough. Using a rolling pin, flatten the dough.
In a separate bowl combine the precooke ground beef with spaghetti sauce and shredded cheddar cheese.
At this point you can make stomboli. Cut the dough into squares and put 1 tbsp beef filling into the middle of each square. Fold the dough over to make a triangle & press edges together. Make sure they stick. Put each triangle on a baking sheet that has parchment paper on it or a nonstick mat.
For the pie, empty the meat into a large pie plate. Transfer dough to the top of the fillng in the plate. Mine broke quite easly, so I made the pie look intentional with a generouse sprinkling of crumbs on top of the dough pieces.
For either, bake at 350 degree F for 15 to 25 minutes, until golden brown.
Extra spaghetti sauce may be used for dipping but don't forget to add the macros!
