Introduction

Ingredients

    1 oz onions, raw, purple/red (1 slice)
    .25 cup, chopped Carrots, raw
    1 serving Pero Family Farms Mini Sweet Peppers svg 3 peppers
    1 serving Beans, Green Cut Frozen (Great Value) 2/3 cup
    .25 cup Beans, black
    .25 cup kernels Yellow Sweet Corn, Frozen
    1 1tsp Olive Oil

Directions

I throw all the veg into a food processor and pulse once or twice for a rough chop. Toss with olive oil and spices to taste (I use garlic, chili, cumin, salt and pepper) and roast for 20-30 minutes until the edges are getting a bit crispy.
