Introduction

Ingredients

    1 package Hebrew National 97% fat free hot dogs
    1 package Krusteaz Honey Cornbread Mix
    1 egg
    1 cup 1% milk
    8 oz shredded cheddar cheese
    .5 cup green bell pepper, chopped
    .5 cup red bell pepper, chopped
    .5 cup onion, chopped
    .5 cup green onion, chopped
    1 tbsp. Smart Balance or butter (butter will slightly change the nutritional value)

Directions

Spray 9x13 pan with cooking oil or line muffin tin with cupcake papers. Preheat oven to 350 degrees. On the stove, heat a saute pan over medium heat. While pan is heating, cut hot dogs into 1/2 inch rounds. Melt Smart Balance, then add cut up hot dogs to pan. Brown for a few minutes on each side (just stir them around periodically, it doesn't have to be perfect). Add onion and red and green bell peppers. Continue to cook a few minutes, until onion and peppers begin to soften. Take off of heat.

In a medium mixing bowl, pour contents of cornbread mix. Add egg and milk and stir until moistened. Add hot dog mixture and stir, then add 3/4 of the cheddar cheese and the green onions and stir again. Pour all into the baking pan or use an ice cream scoop if you are using the muffin tin. Sprinkle remaining cheese on top. Bake for approximately 30 minutes or until a toothpick inserted into one of the muffins or the middle of the casserole comes out clean.
