Introduction

My staple lunch meal My staple lunch meal
Number of Servings: 13

Ingredients

Ground turkey (2 packages - approx 1.3 lbs each)
Chili mix (2 packages - I use Tempo brand Chili Mix)
    Diced Tomatoes (2 cans, undrained)
Dark Kidney Beans (2 cans, drained)
Chili Hot Beans (2 cans, undrained)
Rotel Tomatoes (1 can - drained or undrained, depending how spicy you would like it)

Directions

1. Brown the ground turkey and drain off any fat if you desire (I don't, but I use the 99% lean turkey)

2. Dump in all the other ingredients and let cook at medium heat until it obtains your desired heat throughout.

I freeze mine immediately, so I let it sit for about 10 minutes on medium to low heat and then portion it out into approx 1 cup containers. I end up with 12 to 13 servings.

To reheat from frozen, I pop in in the microwave for 3:30 minutes, mixing once.
