Ingredients

1T butter
1 onion, finely chopped
1 clove garlic
3T flour
1-1/2 c chicken broth or stock
1-1/2 c evaporated skim milk
2 c cooked chicken, chopped
1/2 t salt
1/4 t pepper
green pepper, chopped
1 jar mushrooms, drained
1c corn, cooked
Directions
Melt the butter in a 3-quart sized saucepan. Add the green pepper, onion and garlic and saute until the onions are tender and fragrant.
Stir in the flour, until it is absorbed by the fat and clinging to the vegetables.
Gradually add the chicken broth and milk. Cook and stir until the mixture boils. Boil for a full minute.
Stir in the chicken, corn, mushrooms and salt and pepper to taste. Cook and stir for a few more minutes to thoroughly heat the chicken and to blend the flavors.
Serve over brown rice or whole wheat pasta. (not in NI)
