Ingredients

1 lb. Chicken Breasts, cut into bite sized pieces
2 Tbs. Cornstarch
2 Tsp. Salt
1 Tbs. Vegetable Oil
2 Tbs. Chopped Lemon Grass
1 Tbs. Soy Sauce
1/2 Tbs. Fish Sauce
1/2 Tbs. Sugar
1 Tsp. Chili Flakes
1 Tsp. Chopped Garlic
2 Dried Chili Peppers, optional
1/2 Red Onion, Medium Diced
16-20 Cilantro Leaves
1/4 Cup Coconut Juice
Directions
1. Sprinkle chicken with cornstarch and salt.
2. Combine lemon grass, soy sauce, fish sauce, sugar, chili flakes, chopped garlic, and dried chili peppers in a small bowl and mix together.
3. Heat oil in a large saute pan or wok and saute chicken over medium high heat until chicken is lightly browned.
4. Add in the lemon grass mixture and cook while stirring for about a minute.
5. Stir in onion, cilantro and coconut juice and cook for another minute until onion is just softened. Serve and enjoy!

When these chicken bits fry up they remind me of scallops. I'll be using this frying method again. Thanks for the insperation. I did the recipe as is. It is very salty but I will _definitely_ be making this again with a few changes. I'll be ommiting the 2t salt & reducing the soy sauce to 1t. - 4/27/09
