Introduction

This is simple, mildly seasoned, and flavorful. This is simple, mildly seasoned, and flavorful.
Number of Servings: 3

Ingredients

    1 tb Olive Oil
    12 oz mild white fish filet, cut in large dice
    1 Green Pepper, chopped
    2 Carrots, sliced
    2 Medium Potatoes, diced
    1 cup Clam broth
    3 cups Vegetable broth
    Pinch Saffron
    1 tsp thyme
    1 tb Parsley, chopped
    Salt and pepper to taste


Directions

Heat olive oil and saute onion until translucent. Add green pepper, carrots, and potatoes and stir over medium heat until coated with oil. Add saffron, thyme, and both broths and simmer 15 minutes, until carrots and potatoes are tender. Add fish and cook 5-10 minutes, until opaque.

Makes about 3 2-cup servings.
