Introduction

Number of Servings: 50

Ingredients

    2cups of plain white flour
    1/2 cup caster sugar(granulated white sugar)
    1tsp baking powder
    pinch salt
    2egg whites
    2whole eggs
    1 tabsp orange zest (grated orange rind)
    1/2 teaspoon vanilla essence
    1cup raw pistachios
    1cup raw almonds

Directions

Combine all dry ingredients in a large bowl.
In separate bowl beat together the eggs,zest and essence. Add to dry ingredients amd knead to smooth dough(be careful this can be a little sticky)
Divide and shape into two logs.
Bake on baking sheet for 30 mins at 170degreesC until pale golden in colour.
Cool.Slice very thinly, you should get at least 25 slices per log.
Bake pieces a second time for 10 minutes at 140 degrees C. Store in airtight container
