Introduction
I have been known to add in other vegies that were in the fridge, but this is the basic combination. I sometimes use vegie crumbles or rehydrated TVP instead of the ground beef, and that is good too.I usually eat all of this at a sitting, but it can make two servings if you're not as hungry or serve it with side dishes. Ingredients

4 oz. ground chuck, crumbled
1/2 cup (1 small) zucchini, sliced or chopped
1/2 of a 5" sweet potato, peeled and cubed
1/2 cup (1 small) summer squash, sliced or chopped
1/2 cup onion, chopped
Mrs. Dash (Original or Lemon Pepper) to taste
Directions
Pre-cook the sweet potato cubes in a microwavable dish for 2-3 minutes, until about half cooked. Left over baked sweet potato can be used instead.

Combine meat or meat substitute and vegetables in a large skillet. Add 1-2 Tbsp. water. Sprinkle liberally with Mrs. Dash seasoning. Cook covered over medium heat, stirring occasionally until meat is cooked and vegetables are crisp tender, about 15 minutes.
